Sausage Casserole
Straightforward sausage and baked bean casserole dish. Comfort-food.
This will serve 4 people if it’s plated with sides (I recommend cabbage and mashed potato). On its own it’d probably serve 2-3 people.
Ingredients
- 4 Pork Sausages
- 400g Baked Beans (1 tin)
- 275ml of Vegetable stock
- 1 large carrot
- 1/2 White Onion
- 2 Tbsp mixed herbs
- 1/2 Tbsp Mustard (any will do)
- 1 bay leaf
Method
In a large saucepan, pour a little vegetable oil and bring to medium-high heat. Add the pork sausages and brown them all over.
Meanwhile, chop the onion to a 2cm dice and chop the carrot to the same. Once the sausages are browned, add the onion and carrot to the pan. Cook for 4 minutes.
Add the mustard, herbs and bay leaf to the pan, followed by the stock and baked beans. Bring to the boil.
Drop the heat to a simmer, and cook for 30 minutes with the lid off.
Ensure the sausages are cooked and chop them into smaller pieces if desired and serve.
Tip: some melted cheese and/or chilli flakes go well.
