Roasted Garlic and Thyme Mushrooms

This has to be one of the simplest side dishes ever. Got some left over mushrooms? Perfect. Let’s get cooking!

Ingredients

  • Two handfuls of chestnut or button mushrooms
  • 1 garlic clove, finely diced
  • Dried thyme
  • Olive Oil

Method

Preheat the oven to 180C Fan.

Slice the mushrooms, better to be on the thicker side than the thinner side.

Drizzle a teeny amount of oil on the tray so the mushrooms won’t stick to it, and then lay over the mushrooms, keeping to one layer if possible (but don’t fret too much about it).

Drizzle a little oil over the top of the mushrooms.

Finely dice the garlic and then scatter evenly over the mushrooms, followed by a generous scattering of the thyme. Add some salt and pepper to taste.

Cook in the oven for 10 minutes (or until they look delicious).

Perfect with a side of little roast baby potatoes and a fish cake.
