Lazy Lamb Biryani

A super quick and easy lamb biryani, perfect for a work night


  • 1tbsp curry paste (balti ideal)
  • 370g lamb fillet or steak, cut into chunks
  • 140g basmati rice
  • 250ml lamb, chicken or veg stock
  • 100g spinach


1. In a saucepan (that has a lid), fry the curry paste over a medium heat for a few minutes.

2. Add the chunked lamb and brown on all sides.

3. Add the stock and the rice and stir well. Bring to the boil, and put the lid on. Cook for 15 minutes on a medium heat until the rice is tender and the lamb is cooked through. Wise to stir somewhat frequently as the rice may stick to the bottom of the pan.

4. Take the pan off the heat, add the spinach and stir through. Put the lid back on and put the pan to the side for 5 minutes to steam. The spinach should wilt and then it’s ready to serve.
