Easy Oat Cookies

These cookies are delicious, fairly healthy and are SO easy to make. Use up a spare half hour on Sunday to make something to snack on with a cup of tea throughout the week.

Ingredients

  • 100g plain flour
  • 1tsp baking powder
  • 200g porridge oats
  • 85g unsalted butter, softened
  • 100g light brown sugar
  • 1 egg
  • A pinch of salt

Method

Preheat the oven to 180C/Fan 160C/Gas mark 4.

Put the flour in a large mixing bowl along with the baking powder and a pinch of salt. Mix them together (your fingers good enough for this) and try to make sure there are no lumps.

Stir in the porridge oats.

In a separate medium sized bowl, put in the butter and sugar and whisk together (a fork will do) until as light and fluffy as you can make it. The sugar should be well distributed. Beat in the egg and mix well.

Transfer the butter mixture into the oat mixture and again, mix thoroughly. If at first it seems the oat mixture is too dry, just keep going - it will probably be fine after a bit longer.

Use a table spoon and your hands to form ping-pong sized balls of the mix and place them onto a baking tray. Flatten them down a bit so they cook evenly (and look more like cookies).

Bake the cookies in the oven for 12-15 minutes until lightly coloured. Remove them from the oven and leave them on the tray for a few minutes to set.

The cookies will probably be a little soft at this point, but they will harden once they have cooled down.

Put the cookies on a cooling rack to cool down for a bit longer, and then enjoy with a good cup of tea!

Tip: this a great base recipe to add to. Consider adding 75g of raisins, chocolate chips, crushed nuts, or other dried fruit (finely chopped). Add them to the oat mix when you add the porridge.
