Vegetarian Chilli

Serves 4

Ingredients

  • 1/2 an onion
  • 1 celery stick
  • 1/2 a leek
  • 2 garlic cloves
  • 1 large carrot
  • 1 & 1/2 red peppers
  • 400g tin of chopped tomatoes
  • 175ml water
  • 200g tinned black beans
  • 200g tinned pinto beans
  • 1 & 1/2 tbs of tomato purée
  • 1 tbs dark soy sauce
  • 1/2 tbs balsamic vinegar
  • 1/2 tsp hot chilli powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt

Method

1. Preheat oven to 180C fan.
2. Finely chop all vegetables and garlic.
3. In ovenproof casserole dish fry the onion, celery and leek for 10 minutes.
4. Add garlic, carrots and peppers and stir fry for 2 minutes.
5. Pour in tomatoes, water, black beans and pinto beans.
6. Add tomato purée, soy sauce, balsamic vinegar, chilli powder, cumin, smoked paprika and salt and stir all together.
7. Bring to a simmer and put the lid on and cook oven cook for 1 hour.
8. Serve with rice or jacket potato.
