Roasted plums & mascarpone

Ingredients

  • 8 plums
  • 2 tbsp honey
  • 1/2 tsp cinnamon
  • 250g tub mascarpone (or Greek yoghurt for a lighter version)
  • 2 tbsp flaked almonds

Method

1. Preheat the oven to 180C / 160C fan.
2. Slice plums in half and remove stones.
3. Place plums cut side up in an oven dish.
4. Drizzle with 1tbsp honey.
5. Sprinkle the cinnamon evenly over the plums.
6. Bake in the oven for 15 mins.
7. Remove from oven and drizzle remaining 1tbsp of honey over the plums and return to oven for a final 5 mins.
8. Divide mascarpone between dishes.
8. Serve plums on top of mascarpone and pour remaining juices from the oven dish over the top.
9. Sprinkle flaked almonds over the top and serve.
