Jamie Oliver’s 7 Veg Pasta Sauce

Ingredients

  • 1 onion
  • 1 leek
  • 1 stick of celery
  • 1 carrot
  • 1 red pepper
  • 1 courgette
  • 600g butternut squash (frozen is easier)
  • 1 clove of garlic
  • 1 teaspoon oregano
  • 2 tbs olive oil
  • 1 x 400g tin of quality plum tomatoes

Method

1. Finely chop all of the veg.
2. Finely chop the garlic.
3. Add olive oil to a large pan and bring to a medium heat.
4. Add the garlic and oregano and fry for 2 minutes
5. Add all of the chopped veg
6. Cook with lid on for 25 minutes until veg are soft stirring regularly
7. Add tinned tomatoes and break up tomatoes with wooden spoon.
8. Half fill tin can with water and add to pan.
9. Simmer for 25 minutes with lid off or until sauce has reduced.
10. Cool a little then blitz with a hand blender until smooth.
11. Separate into portions and freeze
