Healthy pasta bake
Ingredients
- 1 red onion
- 1 red pepper
- 1 courgette
- 1 small aubergine
- 2 garlic cloves
- 4 tbsp of red pesto
- 400g tin of chopped tomatoes
- 100g fusilli pasta
- 75g spinach
- 50g cheddar cheese
Method
1. Preheat the oven to 180C.
2. Heat some olive oil in an ovenproof casserole dish.
3. Add the onion, pepper, courgette, aubergine and season with salt and pepper.
4. Fry for 8 minutes until softened.
5. Add garlic and cook for 1 min.
6. Stir in the pesto and cook for 1 min stirring continuously.
7. Add the tomatoes and then fill the tin with water and add to the dish.
8. Add the pasta and bring to a simmer stirring regularly.
9. Cover and bake for 20 minutes.
10. Remove the casserole dish and stir in the spinach and sprinkle the cheese over the top.
11. Return to the oven and cook for uncovered for 10 minutes or until the pasta is tender.
